ANTIBACTERIAL AND ANTIFUNGAL ACTIVITY OF CRUCIFEROUS VEGETABLES - CAULIFLOWER, BROCCOLI

Objectives: This work aims to analyze the antibacterial and antifungal activities of cruciferous vegetables such as cauliflower broccoli. Methods: Cruciferous act a good source natural antioxidants due their high levels carotenoids, tocopherols, ascorbic acid. In this study, two vegetables, broccoli, were selected for anti-fungal studies. The stems, flowers cauliflower, broccoli extracted with 125 mL ethanol water by Soxhlet’s apparatus 6 h. Mueller Hinton agar Sabouraud’s dextrose medium used activity, respectively. each stem, flower extract determined using modified Kirby–Bauer disk diffusion method. Standard antibiotics, gentamicin (25 μg/mL), fluconazole μg/mL) served positive controls Results: Broccoli stem (100 produced higher activity (13 mm) against Escherichia coli. Cauliflower, Staphylococcus aureus. (14 Candida albicans. According results obtained from project, stems extracts show very Gram-negative microorganisms E. coli Pseudomonas aeruginosa. Similarly, shows excellent Gram-positive Bacillus subtilis S. Conclusion: Further analysis is recommended identification active constituents responsible these activities.
